  The purpose of this study is to determine the specific crayfish dish(es) consumed in the largest quantities by non-natives of south Louisiana. Achievement of this purpose will hopefully contribute to the successful test marketing and eventual introduction of crayfish dishes outside south Louisiana by indicating the dish(es) most likely to have the greatest appeal to persons outside south Louisiana.
