Description:A growing demand for fresh tuna is the result of both a declining swordfish catch and the increasing popularity of sushi and sashimi restaurants. The preferred large tuna species (primarily bluefins) are destined for Japan, while most yellowfin tuna remains in domestic markets. This publication contains four papers addressing the following topics: an economic overview of yellowfin production and value trends; tuna fishing methods and gear employed in the Gulf of Mexico and adjacent waters; post-harvest handling considerations; and the tuna product quality code.
