Description:This Hazard Analysis and Critical Control Point (HACCP) training curriculum and accompanying models and overheads were developed by the National Seafood HACCP Alliance a group comprised of food-inspection officials, university food-science educators and seafood-industry representatives. The course was designed to meet the HACCP training requirements established under the U.S. FDA's mandatory seafood HACCP inspection program. This publication serves as an instructor's course manual.
