Description:This course manual was developed by the Alianza Nacional de HACCP para Pescados y Mariscos for the purpose of teaching Hazard Analysis and Critical Control Point principles. Students will become familiar with health hazards associated with mishandled seafood, and learn to develop HACCP plans for one or more of eight common types of seafood processing.
