    Alaskans (and others) operating a fresh fish business use air freight to ship product to market. The air freight carrier plays an important role and, in many cases, airline shipping and handling procedures will determine success or failure for the small processor. This guide covers the basic causes of quality loss in fresh fish and how best to prevent spoilage during shipment through proper packing, temperature control and handling. A checklist is provided for shipment planning, insurance, and freight forwarding. Appendices describe various types of shipping cartons and prechilling systems, and list companies that supply cartons, gel packs, styrofoam products and plastics.
