Description:The Technical Subcommittee of the Surimi Conference of the National Fisheries Institute has developed testing procedures that will serve as 'standard' or 'benchmark' methods for evaluating and specifying the composition and functional properties of raw surimi in the U.S. This standard testing regime has been extensively tested and shown to yield the most accurate measurements of any known methods. These measurements (described in this manual) are readily reproducible in any properly equipped laboratory, requiring only minimal training of the lab personnel.
