Description:In Hawaii, yellowfin tuna caught by handlining are susceptible to a condition called `burnt tuna syndrome.' The flesh of affected tuna appears pale and watery and has a sour-to-bitter taste and chewy texture. This condition decreases the quality--and hence the value--of the fish, resulting in severe economic losses to the handline fishing industry. Research has shown that this and other conditions of poor-quality fish result from poor management and handling by fishermen and fish processors. This handbook includes some information on the burnt tuna syndrome and general guidelines and step-by-step procedures for proper handling and preparation of fish for efficient cooling.
