Description:Since the early 1950s sulfiting agents (`prior sanctioned' by the FDA) have been used to control the harmless but unpleasing discoloration in shrimp that is known as blackspot. Increasing reports of allergic reactions to these agents are leading to reconsideration by the FDA of permissible sulfite levels. In the companion papers reproduced here alternatives to sulfiting agents are tested (none worked as well), and the influence of washing, dipping (seltzer was effective) and cooking methods (sauteing worked best) on reduction of sulfite levels was assessed.
