Description:Twenty-six papers presented at this conference and published here cover (1) the use of sulfites and phosphates in shellfish processing; (2) the control and/or understanding of toxicology, microbiology, parasitology, texture, flavor, appearance and other aspects of fish and shellfish during handling and processing; (3) fish oil and omega-3 fatty acids as heart disease prophylactics; (4) processing details for several individual species including the blue crab, menhaden and the cannonball jellyfish; (5) edibility and acceptability determinants of many species including those designated `alternate' or `underutilized'; and (6) market and production economics, particularly of crawfish.
