Description:Millions of pounds of crawfish are cultivated annually in Louisiana, where they are a popular food item. However, the market for this crop is localized, and the prices are determined largely by abundance of wild harvests. Average wholesale prices of live crawfish have ranged from 30 to 60 cents per pound (live) in recent years, with higher prices corresponding to periods of scarcity. Pond harvesting generally ceases when prices fall below 30 cents per pound unless the landowner can retail them locally at a higher price. Another potentially lucrative outlet for crawfish exists, however, which is nationwide in scope: crawfish as fishbait. This bulletin deals with raising bait crawfish and, specifically, raising bait crawfish in Louisiana.
