Description:Quality is especially important in today's highly competitive salmon market. To meet consumer expectations, the quality of net caught salmon must improve. The old ways of handling and taking care of fish are no longer acceptable. The purpose of this publication is to summarize available information on the major quality problems encountered by users of wild Pacific salmon and to make recommendations for the improvement of quality. Although it is directed primarily to fishermen, the general facts and information it contains are applicable to all persons who handle or transport raw salmon.
