Description:Soft-shelled crawfish have been eaten in Louisiana for many years, but commercial development has been limited by the lack of feasible harvesting methods. This status report discusses current technology for the collection and selection of moltable crawfish, and the procedure for producing soft crawfish in a high-density culture system.
