Description:This booklet describes the results of a demand analysis for Atlantic salmon in Canada, a study done to determine whether more effort should be put into commercial fishing and salmon farming. The results show that salmon stock enhancement programs can increase fishermen's revenues substantially, and that there is great potential for the growth of the farmed Atlantic salmon industry in Canada. A market analysis demonstrates that Atlantic salmon is a luxury good, and that consumers consider Atlantic salmon a substitute for lobster and vice versa. Salmon farmers who cannot afford to take a financial risk are warned that salmon sales could fluctuate to a great extent.
