Description:This course is intended to assist the seafood industry in developing and implementing "Sanitation Control Procedures" as mandated by the U.S. Food and Drug Administration under the "Seafood HACCP Regulation". Rather than a basic food sanitation course, this training format features the regulatory requirements for monitoring sanitary conditions practices, and encourages development of written sanitation standard operating procedures. Included is a chapter for each of the eight key sanitation conditions or areas specified by the new regulations, and of these chapters presents monitoring, corrections and record-keeping requirements; related background information on sanitation; and examples of sanitation control guides.
