Description:For a small segment of the population, eating raw or undercooked oysters could cause serious illness or even death from "Vibrio vulnificus". High-risk individuals should never eat raw oysters but this does not mean they could not consume and enjoy processed oyster products. Post-harvest treatment or processing (PHP) of oysters (e.g., cooking) destroys "V. vulnificus". The long-term goal of the project discussed in this report is to increase consumption and sale of oyster products through (1) promotion of new oyster PHP technologies and value-added products, (2) development of acceptable and safer oyster product alternatives, and (3) formulation of effective education and product promotion strategies.
