Description:While the overall per capita shellfish consumption in the U.S. has increased during the past twenty years, consumption of oysters during the same period has decreased. Food safety is a factor often thought to be a principal reason for the decrease in consumption of oysters; however, other factors are also involved. This marketing plan is focused on how oyster consumption can be increased among those who already enjoy them. Results of a survey indicated that oyster consumption would increase if fresh oysters were more readily available, or if they were more often sold in a prepared form that could compete with other seafood take-out items. Price and safety concerns are also discussed.
